Abstract:
(EN) [Problem] The purpose of the present invention is to provide delicious noodles in which deterioration in quality such as a reduction in the separability of the noodles during storage has been effectively suppressed, a production method for the noodles, and a noodle separation improver. [Solution] It is possible to dramatically ameliorate a reduction in the separability of noodles during storage by adding an amylase and a lipase having 1,3-positional specificity to the noodles, and it is possible to further improve the separability of the noodles by also using a water-soluble hemicellulose.
(FR) [Problème] L'objet de la présente invention est de fournir de délicieuses nouilles dont la détérioration de la qualité telle qu'une réduction de la séparabilité des nouilles pendant le stockage a été supprimée de manière efficace, un procédé de production des nouilles, et un améliorant de séparation de nouilles. [Solution] Il est possible d'améliorer considérablement la réduction de la séparabilité des nouilles pendant le stockage par addition d'une amylase et d'une lipase ayant une spécificité en position 1,3 aux nouilles, et il est possible d'améliorer encore la séparabilité des nouilles en utilisant également une hémicellulose soluble dans l'eau.
