Abstract:
(EN)  In order to provide a modifier for baked goods which has little effect on the elasticity and extensibility of the dough and with which it is possible to obtain baked goods having large expansion due to baking, good melt in the mouth, and an exceptional crunchy texture, the present invention provides a powdered modifier for baked goods, the modifier including particles that contain sodium stearoyl lactylate and edible hydrogenated oil. This modifier is obtained, for example, by cooling and powdering a mixture of melted sodium stearoyl lactylate and edible hydrogenated oil.
(FR)  En vue de fournir un modificateur pour des produits de boulangerie ayant peu d'effet sur l'élasticité et l'extensibilité de la pâte et permettant d'obtenir des produits de boulangerie présentant une grande dilatation grâce à la cuisson, fondants en bouche et présentant une texture croquante exceptionnelle, la présente invention concerne un modificateur en poudre pour des produits de boulangerie, le modificateur comprenant des particules qui contiennent du stéaroyl lactylate de sodium et une huile hydrogénée comestible. Le modificateur selon l'invention est obtenu, par exemple, par refroidissement et réduction en poudre d'un mélange de stéaroyl lactylate de sodium fondu et d'huile hydrogénée comestible.
(JA)  本発明は、生地の弾力や伸展性への影響が少なく、焼成による膨張が大きく、且つ口溶けが良く、サクサク感を有する食感に優れた焼き菓子を得ることができる焼き菓子用改良剤を提供するために、ステアロイル乳酸ナトリウム及び食用硬化油を含有する粒子を含む粉末状の焼き菓子用改良剤を提供する。該改良剤は、例えば溶融したステアロイル乳酸ナトリウムと食用硬化油との混合物を冷却し、粉末化することにより得られる。
