Abstract:

(EN)The invention relates to an automated facility and procedure which can be used to automate the processing of tuna and similar. The facility comprises: an inlet section (7); a cooking section (11); a heading section (13); a separation section (14); and an extraction section (15). The facility also comprises a closed chain device that passes through the sections (7, 11, 13, 14, 15) in order, and a conveyor (6) secured to the chain device for conveying a specimen (2) of tuna or similar along the length of the facility. The conveyor (6) comprises: a chassis (53) secured to the chain device; supporting means attached to the chassis (53) in order to support the specimen (2); first bayonets (21) and second bayonets (22) which can move and which are designed to be driven into the specimen (2); and movement means for moving the first bayonets (21) driven into the specimen (2) towards one side thereof and the second bayonets (22) driven into the specimen (2) towards the other side thereof in order to separate the loins of the specimen (2).

Comprende: sección de entrada (7), sección de cocción (11), sección de descabezado (13), sección de separación (14), y sección de extracción (15), dispositivo de cadena cerrado que recorre las secciones (7, 11, 13, 14, 15) en orden; y transportador (6), fijado al dispositivo de cadena, para transportar un ejemplar (2) de túnido o similar a lo largo de la instalación, comprendiendo el transportador (6):chasis (53) fijado al dispositivo de cadena;medios de soporte vinculados al chasis (53) para soportar el ejemplar (2); primeras bayonetas (21) y segundas bayonetas (22), desplazables y configuradas para clavarse en el ejemplar (2), y medios de desplazamiento para desplazar las primeras bayonetas (21) clavadas, hacia un lado del ejemplar (2) y las segundas bayonetas (22) clavadas, hacia el lado opuesto, para separar los lomos del ejemplar (2).
