(FR)L'invention concerne un procédé de fabrication de nouilles crues réfrigérées comprenant une étape de refroidissement des nouilles crue dans une plage températures de réfrigération, lesdites nouilles crues étant obtenues par exposition à l'extrusion à une pression de 80-200 kgf/cm2 d'une pâte qui contient 0,01-0,5 partie en masse d'acide alginique pour 100 parties en masse d'une farine de départ.
