Abstract:
(EN) A device for the accelerated aging of wine consisting of a low direct-current voltage applied to inert electrodes is described herein. The device improves the taste of many wines by accelerating the natural aging process which is primarily a free-radical-induced reaction involving the polymerization and precipitation of polyphenols such as tannins, thus reducing the astringency and improving the taste of many full bodied wines. The device can be miniaturized for use with single servings or scaled up to be applied to large commercial batches. The device has the added feature of being able to reduce the sulfite content of some wines, reducing foul tastes caused by free sulfur dioxide and possibly reducing negative reactions to sulfite for some users of wine.
(FR) L'invention porte sur le vieillissement accéléré du vin consistant en une faible tension de courant direct appliquée à des électrodes inertes. Le dispositif améliore le goût de nombreux vins en accélérant le processus naturel de vieillissement qui est principalement une réaction induite par des radicaux libres impliquant la polymérisation et la précipitation de polyphénols tels que les tanins, réduisant ainsi l'astringence et améliorant le goût de nombreux vins charpentés. Le dispositif peut être miniaturisé pour une utilisation en portions individuelles ou élargi pour être appliqué à de grands lots commerciaux. Le dispositif possède la caractéristique additionnelle d'être apte à réduire la teneur en sulfites de certains vins, réduisant les mauvais goûts dus au dioxyde de soufre libre et réduisant éventuellement les réactions négatives de certains consommateurs aux sulfites.
