(EN)Described is a method for providing an outer surface of a foodstuff with a gel layer, comprising the steps of applying a liquid gelling composition comprising a gellable hydrocolloid and a plasticizer on the said outer surface of the foodstuff, and allowing the liquid gelling composition to gel while in contact with the outer surface of the foodstuff, therewith forming a gel layer directly covering the said outer surface of the foodstuff. Also described is a novel food coating composition, in particular for coating pre-prepared meals, that are to be heated before consumption. The gelling composition may also comprise additional substances such as nutrients, flavouring agents or medicaments. Also described is a food product coated with the said composition and a method for coating food stuff.
(FR)La présente invention concerne un procédé permettant de doter une surface externe d'un aliment d'une couche de gel, le procédé comprenant les étapes consistant à appliquer une composition gélifiante liquide comprenant un hydrocolloïde gélifiable et un plastifiant sur ladite surface externe de l'aliment, et à laisser la composition gélifiante liquide se gélifier pendant le contact avec la surface externe de l'aliment, ce qui permet de former une couche de gel enrobant directement ladite surface externe de l'aliment. L'invention concerne également une nouvelle composition d'enrobage alimentaire, en particulier pour enrober des plats préparés, qui doivent être chauffés avant d'être consommés. La composition gélifiante peut également comprendre d'autres substances telles que des nutriments, des agents aromatisants ou des médicaments. L'invention concerne également un produit alimentaire enrobé de ladite composition et un procédé permettant d'enrober des aliments.
