Abstract:
(EN)  The present invention provides a gelling agent allowing a gelatinous foodstuff to gel reliably with a good texture when distributed at normal temperature. A food material derived from vegetables and fruits treated with a plant tissue macerating enzyme is used in said foodstuff. At least one type of component not subject to gelling inhibition is selected from κ-carrageenan, ι-carrageenan, gellan gum, and xanthan gum for at least one enzyme selected from the group consisting of cellulase, pectinase, and hemicellulase, and is blended into a gelling agent.
(FR) La présente invention concerne un agent gélifiant permettant de gélifier une denrée alimentaire gélatineuse de manière fiable qui présente une bonne texture lorsqu'elle est distribuée à une température courante. Une substance alimentaire extraite de végétaux et de fruits traités avec une enzyme de macération de tissu végétal est utilisée dans la denrée alimentaire. Au moins un type de composant non soumis à l'inhibition de gélification est sélectionné à partir de Κ-carraghénane, ι-carraghénane, gomme gellane et gomme xanthane pour au moins une enzyme sélectionnée dans le groupe constitué de cellulase, pectinase et hémicellulase, et est mélangé à un agent gélifiant.
