Abstract:
The present invention addresses the problem of utilizing the strong water- and oil-holding properties, namely binding effect, of pith fibers (ground inner stem fibers) separated from sunflower stems that are a natural material to reinforce the binding properties of processed meat products, in particular, processed chicken products, and applying the same to other processed foods, for example, noodles and confectionery. The present inventor found that lipophilic pith fibers (ground inner stem fibers) separated from sunflower stems have strong water- and oil-holding properties, namely binding effect, and thus developed a natural binding auxiliary material capable of imparting elastic properties to processed meat products, noodles and, in particular, processed food products having difficulties in binding such as chicken sausages, fish paste products, etc. The present inventors also succeeded in applying the natural binding auxiliary material to noodles and confectionery.
