Provided is a method for manufacturing a yeast extract containing copper includes an extraction step wherein yeast containing copper is suspended in a solution that contains an amino acid or a salt thereof and the solid components and liquid components of the suspension obtained are separated with the amino acid or salt thereof being water-soluble. Also provided are a yeast extract containing copper, a food product, and a green color preserving and restoring agent for vegetables.

L'invention concerne un procédé de fabrication d'un extrait de levure contenant du cuivre, comprenant une étape d'extraction au cours de laquelle la levure contenant du cuivre est suspendue dans une solution qui contient un acide aminé ou son sel, et les composants solides et les composants liquides de la suspension obtenue sont séparés avec l'acide aminé ou son sel, lesquels sont solubles dans l'eau. L'invention concerne également un extrait de levure contenant du cuivre, un produit alimentaire, et un agent de conservation et de rétablissement de la couleur verte pour les légumes.
