Abstract
(EN) Provided is a technique whereby a "body taste" is effectively imparted to a food or beverage. One or more γ-glutamylpeptides selected from the group consisting of γ-Glu-X-Gly (X represents an amino acid other than Cys or an amino acid derivative) and γ-Glu-Y (Y represents an amino acid other than Cys or an amino acid derivative) and one or more dicarboxylic acids selected from the group consisting of succinic acid, maleic acid, and methylmalonic acid are added to a food or beverage or to a raw material therefor, thereby producing a food or beverage having a "body taste" imparted thereto.
(FR) La présente invention concerne une technique, un « goût de corps » pouvant par là-même être conféré de manière efficace à un aliment ou à une boisson. Un ou plusieurs γ-glutamylpeptides sélectionnés parmi le groupe constitué par γ-Glu-X-Gly (X représentant un acide aminé autre que Cys ou un dérivé d'acide aminé) et γ-Glu-Y (Y représentant an acide aminé autre que Cys ou un dérivé d'acide aminé) et un ou plusieurs acides dicarboxyliques sélectionnés parmi le groupe constitué par un acide succinique, un acide maléique et un acide méthylmalonique sont ajoutés à un aliment ou à une boisson ou à une matière première destinée à ceux-ci, produisant ainsi un aliment ou une boisson auquel « goût de corps » est conféré.
(JA)  飲食品に対して効果的に「コク味」を付与する技術を提供する。γ-Glu-X-Gly(XはCysを除くアミノ酸又はアミノ酸誘導体を表す)およびγ-Glu-Y(YはCysを除くアミノ酸又はアミノ酸誘導体を表す)からなる群より選択される1またはそれ以上のγ-グルタミルペプチド、ならびにコハク酸、マレイン酸、およびメチルマロン酸からなる群より選択される1またはそれ以上のジカルボン酸を、飲食品またはその原料に添加することにより、「コク味」の付与された飲食品を製造する。
