Abstract
(EN) A food composition comprising a colloidal system having particles therein and a process for its preparation. The composition can be a confectionery composition such as chocolate. The system comprises either a continuous fat phase having a dispersed aqueous phase therein; or a continuous aqueous phase having a dispersed fat phase therein. The particles are selected from one or more of silica, magnesium aluminium silicate, aluminium silicate, hydrous sodium lithium magnesium silicate, sodium magnesium fluorosilicate, and titanium dioxide.In some embodiments the particles have a diameter of less than 1000nm.
(FR) La présente invention concerne une composition alimentaire comportant un système colloïdal contenant des particules et un procédé pour sa préparation. La composition peut être une composition de confiserie telle que du chocolat. Le système comporte soit une phase grasse continue contenant une phase aqueuse dispersée à l'intérieur ; soit une phase aqueuse continue contenant une phase grasse dispersée à l'intérieur. Les particules sont choisies parmi un ou plusieurs parmi le groupe constitué de silice, du silicate de magnésium et d'aluminium, du silicate d'aluminium, du silicate de lithium et de magnésium et de sodium anhydre, du fluorosilicate de sodium et de magnésium, et du dioxyde de titane. Selon certains modes de réalisation, les particules ont un diamètre inférieur à 1000nm.
