(EN) A method for hydrolyzing polysaccharides comprising the steps of: removing air from the polysaccharides using a vacuum environment; heating the polysaccharides rapidly with a high pressure fluid; and cooling the heated polysaccharides abruptly under a vacuum environment to obtain the hydrolysed polysaccharides. '
(FR) La présente invention concerne un procédé d'hydrolyse de polysaccharides, le procédé comprenant les étapes suivantes : l'élimination de l'air des polysaccharides dans un environnement sous vide ; le chauffage rapide des polysaccharides avec un fluide sous haute pression ; et le refroidissement brusque des polysaccharides chauffés, dans un environnement sous vide pour obtenir les polysaccharides hydrolysés.
