The present invention relates to mutants of lactic acid bacteria which are resistant to the antibiotic ampicillin and which were found to give an increased texture when grown in milk while maintaining the other growth properties of the parent strain. The present invention, furthermore, relates to compositions comprising such mutants, and to dairy products fermented with the lactic acid bacteria resistant to ampicillin.

La présente invention concerne des mutants de bactéries d'acide lactique qui sont résistant à l'antibiotique ampicilline et qui ont été trouvés donner une texture améliorée lorsqu'ils sont amenés à croître dans du lait tout en maintenant les autres propriétés de croissance de la souche parente. De plus, la présente invention concerne des compositions comprenant ces mutants, et des produits laitiers fermentés avec les bactéries d'acide lactique résistant à l'ampicilline.
