The purpose of the present invention is to provide a method for producing a fat by an interesterification reaction using lipase. Specifically, the present invention relates to a method for producing interesterified fat, characterized in including (1) a low-temperature kaolin treatment step for bringing a fat and kaolin into contact at 30-80°C to obtain a reaction substrate, and (2) a step for interesterifying this reaction substrate in the presence of a lipase-containing composition.

La présente invention concerne un procédé pour produire une graisse par une réaction d'interestérification en utilisant une lipase. Spécifiquement, la présente invention concerne un procédé pour produire une graisse interestérifiée, caractérisé en ce qu'il comprend (1) une étape de traitement avec du kaolin à basse température pour mettre en contact une graisse et du kaolin à 30 à 80 °C pour obtenir un substrat de réaction, et (2) une étape pour interestérifier ce substrat de réaction en présence d'une composition contenant une lipase.
