Abstract:
(EN) The present invention discloses primers for amplifying farnesyl pyrophosphate synthase gene, having sequence selected from the group consisting of Seq Id. nos.1-3 and 5-7, from mango. Also disclosed herein is a novel nucleotide sequence of sequence ID no. 8 encoding said amplified farnesyl pyrophosphate synthase (FPPS) for enzyme production in an artificial system thus generating the desired flavor in food products.
(FR) L'invention concerne des amorces d'amplification du gène de la farnésyl pyrophosphate synthase, dont la séquence est choisie dans le groupe constitué des SEQ. ID No. 1-3 et 5-7 issues de la mangue. L'invention concerne également une nouvelle séquence nucléotidique de la SEQ. ID No. 8 codant pour ladite farnésyl pyrophosphate synthase (FPPS) amplifiée, pour la production d'enzymes dans un système artificiel, créant ainsi la saveur désirée dans des produits alimentaires.
