Abstract
(EN) Provided are an unfermented beer-taste beverage to which a fermented flavour is imparted and a manufacturing method therefor. An unfermented beer-taste beverage to which a favourable fermented flavour that is specific to beer is imparted can be obtained by a method for manufacturing an unfermented beer-taste beverage, the method comprising a process of adding a flavouring composition containing a sulfur-containing compound to an unfermented beer-taste beverage such that the content of the sulfur-containing compound is 1×102 ppt to 1×103 ppt.
(FR) L'invention fournit une boisson au goût de bière infermentée mais dotée d'une sensation de fermentation, et le procédé de fabrication de celle-ci. Plus précisément, l'invention concerne un procédé de fabrication de boisson au goût de bière infermentée qui inclut une étape au cours de laquelle une composition d'arôme comprenant un composé de soufre, est ajoutée à la boisson au goût de bière infermentée de sorte que la teneur en composé de soufre est supérieure ou égale à 1×102ppt et inférieure ou égale à 1×103ppt. Ainsi, il est possible de fournir une boisson au goût de bière infermentée mais dotée d'une sensation satisfaisante de fermentation propre à une bière.
(JA)  発酵感が付与された非発酵ビールテイスト飲料、及びその製造方法を提供すること。 含硫化合物を含有する香料組成物を、前記含硫化合物の含有量が1×102ppt以上1×103ppt以下となるように非発酵ビールテイスト飲料に添加する工程を含む非発酵ビールテイスト飲料の製造方法によれば、ビールに特有の良好な発酵感が付与された非発酵ビールテイスト飲料を提供することができる。
