Abstract
(EN) Provided are: a manufacturing method for a sucrose fatty acid ester concentrate mixture, said method being characterized by hydrolyzing the starting material for a sucrose fatty acid ester mixture in the presence of a lipase in order to increase the content ratio of sucrose fatty acid esters having an esterification degree of 6-8; and a sucrose fatty acid ester concentrate mixture comprising 65 mass% or more of esters having an esterification degree of 6-8.
(FR) L'invention concerne : un procédé de fabrication d'un mélange concentré d'esters d'acides gras et de saccharose, ledit procédé étant caractérisé par l'hydrolyse de la matière de départ pour un mélange d'esters d'acides gras et de saccharose en présence d'une lipase afin d'augmenter le rapport de teneur d'esters d'acides gras et de saccharose ayant un degré d'estérification de 6-8 ; et un mélange concentré d'esters d'acides gras et de saccharose comprenant 65 % en masse ou plus d'esters ayant un degré d'estérification de 6-8.
(JA)  蔗糖脂肪酸エステル混合物原料をリパーゼの存在下で加水分解して、エステル化度6~8の蔗糖脂肪酸エステルの含有割合を増加させることを特徴とする、改質蔗糖脂肪酸エステル混合物の製造方法、及びエステル化度6~8の蔗糖脂肪酸エステルを65質量%以上の割合で含有する蔗糖脂肪酸エステル混合物を提供する。
