This method for producing a wrapped food product comprising a filling covered by dough involves: forming said wrapped food product by arranging, on a flange having an opening, multiple shutter pieces having pressing surfaces facing and surrounding said opening; pressing the pressing surfaces on the circumferential edges of the dough disposed on the flange, and synchronously moving the shutter pieces by means of a link mechanism in order to insert the dough through the opening, leaving the portion controlled in the dough on the flange; holding the circumferential edges of the dough between the flange and the shoulder portion of a nozzle, pressing the dough on the flange against the nozzle in order to squeeze the circumferential edges of the dough into the gap between the outer circumference of the nozzle and the pressing surfaces; and ejecting through the nozzle the filling onto the dough on the flange, allowing the dough to bulge from the opening, separating the dough from the nozzle, and aggregating the circumferential edges by means of the pressing surfaces.

La présente invention concerne un procédé de production d'un produit alimentaire fourré comprenant une garniture recouverte de pâte. Ledit procédé comprend les étapes consistant à façonner ledit produit alimentaire fourré en disposant, sur une collerette percée d'une ouverture, de multiple segments de trappe obturatrice dotés de surfaces de compression faisant face à ladite ouverture et l'entourant ; à presser les surfaces de compression sur les bords circonférentiels de la pâte disposée sur la collerette et à actionner les segments de trappe obturatrice de manière synchrone au moyen d'un mécanisme de liaison afin d'introduire la pâte dans l'ouverture, en laissant la partie contrôlée dans la pâte sur la collerette ; à maintenir les bords circonférentiels de la pâte entre la collerette et l'épaulement d'une filière, à presser la pâte présente sur la collerette contre la filière afin de comprimer les bords circonférentiels de la pâte dans l'espace situé entre la circonférence extérieure de la filière et les surfaces de compression ; et à faire sortir la garniture par la filière en direction de la pâte située sur la collerette, en permettant à la pâte de faire saillie depuis l'ouverture, à séparer la pâte de la filière et à refermer les bords circonférentiels au moyen des surfaces de compression.

 具材を生地で覆った包被食品の製造方法は、開口を備えたフランジ上に、前記開口を囲むべく、それぞれ前記開口に面した押圧面を有する複数のシャッタ片を配置し、前記押圧面を前記フランジ上の前記生地の周縁部に押圧し、前記生地を前記開口に没入させて前記生地において制御された部分を前記フランジ上に残すべく、リンク機構により前記シャッタ片を同期して運動せしめ、前記フランジとノズルの肩部との間に前記生地の前記周縁部を挟んで前記生地の前記周縁部を前記ノズルの外周と前記押圧面との間の隙間に搾り上げるべく、前記フランジ上の前記生地を前記ノズルに押し当て、前記フランジ上の前記生地上に前記具材を前記ノズルを通じて吐出して前記生地を前記開口から膨出させ、前記ノズルから前記生地を引き離し、前記周縁部を前記押圧面により集約する、ことよりなる。
