Disclosed is a stevia tea rich in steviol glycosides and a processing method thereof. The method comprises the following steps: the fresh stevia leaves are spread out for airing, subjected to a deactivation of enzymes, rolled and baked to dry. The stevia tea made by the method has a pleasant aroma, mellow taste, high steviol glycoside content, and the stevioside, rebaudioside A and total glycosides thereof is respectively 42.40%, 31.21% and 32.71% higher than that obtained by air drying when compared with the commercially available stevia leaves that have been dried in the sun.

L'invention porte sur un thé de stevia riche en glycosides de stéviol et sur un procédé de traitement de celui-ci. Le procédé comprend les étapes suivantes : les feuilles de stevia fraîches sont éparpillées pour subir une aération, soumises à une désactivation d'enzymes, passées au rouleau et cuites pour les faire sécher. Le thé de stevia fabriqué par le procédé a un arôme plaisant, un goût moelleux, une teneur élevée en glycosides de stéviol et les teneurs en stévioside, en rebaudioside A et en glycosides totaux de celui-ci sont respectivement 42,40 %, 31,21 % et 32,71 % plus élevées que celles de thés obtenus par séchage à l'air par comparaison avec les feuilles de stevia disponibles dans le commerce qui ont été séchées au soleil.

公开了一种富含甜菊糖苷的甜菊茶加工方法,该方法包括以下步骤:将甜菊鲜叶进行摊晾、杀青、揉捻、烘干。该方法制造出的甜菊茶香气怡人、滋味醇厚,甜菊糖苷含量高,与市售的晒干的甜菊叶相比,其甜菊苷、莱包迪苷A、总糖苷相对于晾干分别高出42.40%、31.21%、32.71%。
