Abstract:
(EN) An edible receptacle suitable for containing a frozen confection the receptacle comprising at most 15 wt% binder and at least 50 wt% of particles of nuts wherein the particles have an average diameter of from 0.001 to 5mm and a water content of at most 5 wt% is provided. A process for preparing an edible receptacle, the process comprising the steps of: (a) dosing a required amount of edible receptacle ingredients into a support mould, the ingredients comprising at most 15 wt% binder and at least 50 wt% of particles of nuts by weight of the edible receptacle wherein the particles have an average diameter of from 0.001 to 5mm and a water content of at most 5 wt%; (b) inserting a shaping tool into the ingredients in the support mould; and (c) vibrating the shaping tool at an ultrasonic frequency to form the ingredients into an edible receptacle of the desired shape is also provided.
(FR) La présente invention concerne un réceptacle comestible permettant de contenir une confiserie congelée. Le réceptacle comprend au plus 15 % en poids d'un liant et au moins 50 % en poids de particules de noix, le diamètre moyen des particules allant de 0,001 à 5 mm et la teneur en eau étant d'au plus 5 % en poids. Selon la présente invention, un procédé de préparation d'un réceptacle comestible comprend les étapes consistant (a) à doser une quantité requise d'ingrédients de réceptacle comestible dans un moule de support, les ingrédients comprenant au plus 15 % de liant et au moins 50 % de particules de noix en poids du réceptacle comestible, le diamètre moyen des particules allant de 0,001 à 5 mm et la teneur en eau étant d'au plus 5 % en poids ; (b) à insérer un outil de mise en forme dans les ingrédients dans le moule de support ; et (c) à faire vibrer l'outil de mise en forme à une fréquence ultrasonore afin de donner aux ingrédients la forme souhaitée d'un réceptacle comestible.
