Abstract:
(EN) In order to obtain, from fruit-wine pomace or fruit pomace, a food product that has the flavor and color of fruit wine, said fruit-wine pomace or fruit pomace is crushed into a paste with a mean particle diameter of 0.5 mm or less and said paste is then subjected to alcohol fermentation, yielding a fermented food paste. If the fruit-wine pomace is red-wine pomace, said pomace is made to contain 2% to 5% seeds by weight.
(FR) Pour obtenir, à partir de marc à vin de fruits ou autre marc de fruits, un produit alimentaire ayant l'arôme et la couleur d'un vin de fruits, ledit marc à vin de fruits ou marc de fruits est pressé jusqu'à obtention d'une pâte ayant un diamètre de particules moyen de 0,5 mm ou moins et ladite pâte est ensuite soumise à une fermentation alcoolique, pour obtenir une pâte alimentaire fermentée. Si le marc à vin de fruits est un marc à vin rouge, ledit marc contient 2 à 5 % en poids de pépins.
(JA)  果実酒の搾汁滓又は果実の搾汁滓から果実酒の風味と色合いを備えた食品を得るために、果実酒の搾汁滓又は果実の搾汁滓を破砕して平均粒径0.5mm以下のペースト状破砕物とし、それをアルコール発酵させることによりペースト状発酵食品を製造する。搾汁滓が赤ワインの搾汁滓の場合に、種を2~5wt%含有させる。
