(FR)La présente invention concerne un procédé de préparation de kimchi de chou consistant à assaisonner du chou mariné et à disposer ce dernier en couches, puis à rouler le choux en forme de kimbap et à le conserver et le laisser fermenter de façon à ce que le kimchi puisse être découpé comme du kimbap et dégusté. Le kimchi peut être dégusté après addition d'une sauce liquide, présente une saveur acide supplémentaire et croque sous la dent.
