(EN)A continuous process for making a wheat tortilla or other similar products using a continuous pressing step that occurs during a continuous oven initial cooking step or immediately thereafter. Applicants' invention produces a final product with characteristics of a traditionally cooked flour tortilla using equipment that provides for significant increases in manufacturing throughput. The combination of the continuous oven with the concurrent, or relatively concurrent, pressing step substitutes for the hot pressing plates used in previous methods.
(FR)Cette invention concerne un processus continu de fabrication d'une tortilla de blé ou autres produits similaires utilisant une étape de compression continue réalisée lors d'une première étape de cuisson en continu dans un four ou immédiatement après. L'invention permet d'obtenir un produit final doté des caractéristiques d'une tortilla traditionnelle à l'aide d'un équipement assurant une augmentation significative du débit de production. L'association du four en continu et de l'étape de compression concourante, ou relativement concourante, remplace les plaques de compression à chaud utilisées dans les procédés précédents.
