An oil or fat composition comprising 0.02-0.65 mass% of free triterpene alcohol and 0.18 mass% or less of γ-oryzanol. Provided is an oil or fat composition which can be used in cooking, and can improve the performance, such as textures and flavors, of cooked products.

L'invention concerne une composition d'huile/graisse comprenant 0,02 à 0,65% en masse d'un alcool triterpénique libre, et au plus 0,18% en masse d'un γ-oryzanol. Plus précisément, l'invention fournit une composition d'huile/graisse pouvant être mise en œuvre pour la cuisson, et permettant une amélioration de la texture / de la saveur d'aliments cuits.
