Abstract

The present invention describes a method of marking fruits which comprises an incision in a fruit piece surface with a laser beam and the deposition in such superficial incision of a contrast agent comprising salts or oxides of iron or copper at a concentration between 0.001% and 1 % of the total weight. This salts or oxides are capable of reacting with any of the phenolic and/or polyphenolic compounds present in the superficial tissues of the fruit. This contrast agent may also comprise other additives: acidity regulators, emulsifiers, antioxidants and complexing.

La présente invention concerne un procédé permettant de marquer des fruits, procédé qui comporte une incision dans une surface d'un morceau de fruit à l'aide d'un faisceau laser et le dépôt dans une telle incision superficielle d'une substance de contraste comportant des sels et des oxydes de fer et de cuivre selon une concentration située entre 0,001 % et 1 % du poids total. Ces sels ou oxydes sont en mesure de réagir avec l'un quelconque des composés phénoliques et/ou polyphénoliques présents dans les tissus superficiels du fruit. Cette substance de contraste peut également comporter d'autres additifs : des régulateurs d'acidité, des émulsifiants, des antioxydants et une formation de complexes.
