Abstract

The present invention describes a reconstituted food ingredient that comprises a dry fruit, carob, a derivative thereof or mixtures thereof, which has a low fat content, or a low sugar content, or a low fat and sugar content, characterized in that said ingredient is enriched with phenolic compounds, and/or sterols and tocopherols originating from dry fruit or carob. The invention likewise describes a method for preparing said reconstituted food ingredient and also the use thereof in the treatment and/or prevention of cardiovascular diseases, vascular diseases, neuronal diseases, neurodegenerative diseases, cancer, inflammatory processes, metabolic syndrome, etc. by means of the use of this ingredient in the diet. Also described is the use of said ingredient in the preparation of a food composition and various food compositions for human or animal consumption.

La presente invención describe un ingrediente alimenticio reconstituido que comprende un fruto seco, algarroba, un derivado de los mismos o sus mezclas que presenta un contenido bajo en grasa, o bajo en azúcares, o bajo en grasa y azúcares, caracterizado por estar enriquecido en compuestos fenólicos, y/o esteroles y tocoferoles procedentes de fruto seco o algarroba. La invención describe asimismo un procedimiento para preparar dicho ingrediente alimenticio reconstituido, así como su empleo en el tratamiento y/o prevención de enfermedades cardiovasculares, enfermedades vasculares, enfermedades neuronales, neurodegenerativas, cáncer, procesos inflamatorios, síndrome metabólico etc. mediante el uso de este ingrediente en la dieta. Asimismo se describe el empleo de dicho ingrediente en la elaboración de una composición alimenticia y diversas composiciones alimenticias para consumo humano o animal.

La présente invention concerne un ingrédient alimentaire reconstitué comprenant un fruit sec, de la caroube, un dérivé de ceux-ci ou des mélanges de ceux-ci, et qui présente une faible teneur en matières grasses, ou une faible teneur en glucides, ou une faible teneur en matières grasses et en glucides, caractérisé en ce qu'il est enrichi en composés phénoliques et/ou en stérols et en tocophérols provenant de fruits secs ou de caroube. L'invention concerne en outre un procédé de préparation dudit ingrédient alimentaire reconstitué, ainsi que son utilisation pour le traitement et/ou la prévention des maladies cardiovasculaires, des maladies vasculaires, des maladies neuronales, des maladies neurodégénératives, des cancers, des processus inflammatoires, du syndrome métabolique etc. par l'intégration dudit ingrédient au régime alimentaire. L'invention concerne également l'utilisation dudit ingrédient pour la préparation d'une composition alimentaire, ainsi que diverses compositions alimentaires destinées à la consommation humaine ou animale.
