(EN)The present invention relates to a process for obtaining, peptide extracts from whey proteins by hydrolysis of one or more proteins or peptides containing the amino acid sequences of bioactive peptides, using for that purpose, proteolytic enzymes in particular cardosins and other similar enzymes- produced by Cynara's species. Alternatively, peptides can be obtained by chemical, synthesis or by enzymatic processes and/or fermentation. The process enclosed by the present invention allows obtaining protein concentrates and peptides with low-lactose and salts content, which have biological activities relevant to the formulation of products in food and pharmaceutical industries. Thus, the hydrolysates and their fractions or peptides resulting from this process can be used in food products acting as a preservative or after eating, strengthening the body's natural defenses. Alternatively, they can be also used in the preparation of pharmaceutical products aimed at diseases, particularly to facilitate control of blood pressure and/or bacterial infections, as well as inflammatory and ulcerogenic processes. The invention allows enlarging the applications of milk proteins, thus contributing to the recovery and in particular the valorization of whey.
(FR)La présente invention concerne un procédé d'obtention d'extraits peptidiques de protéines lactosériques par hydrolyse d'un(e) ou de plusieurs protéines ou peptides contenant les séquences d'acides aminés de peptides bioactifs, consistant à utiliser, à cet effet, des enzymes protéolytiques, et notamment des cardosines et d'autres enzymes similaires produites par l'espèce Cynara. En variante, les peptides peuvent être obtenus par synthèse chimique ou par des processus enzymatiques et/ou fermentatifs. Le procédé couvert par la présente invention permet d'obtenir des concentrés protéiques et peptidiques à faible teneur en lactose et en sels, qui présentent des activités biologiques utiles pour la formulation de produits dans les industries alimentaire et pharmaceutique. Ainsi, les hydrolysats et leurs fractions ou peptides résultant dudit procédé peuvent être utilisés dans des produits alimentaires, agissant comme conservateurs pour ceux-ci ou, après leur ingestion, renforçant les défenses naturelles de l'organisme. Ils peuvent en outre être utilisés dans l'élaboration de produits pharmaceutiques contre des maladies, notamment pour faciliter la régulation de la pression artérielle et/ou la lutte contre les infections bactériennes, et des processus inflammatoires et ulcérogéniques. L'invention élargit le champ d'application des protéines lactiques, contribuant ainsi à l'amélioration et à la revalorisation du lactosérum, notamment.
(PT)A presente invenção refere-se a um processo de obtenção de extractos peptídicos de proteínas do soro do leite, por hidrólise de uma ou mais proteínas ou péptidos que contêm as sequências de aminoácidos de péptidos bioactivos, utilizando, para esse efeito, enzimas proteolíticas, em particular cardosinas e outras enzimas similares produzidas por espécies de Cynara. Alternativamente, os péptidos podem obter-se por síntese química ou por processos enzimáticos e/ou fermentativos. O processo coberto pela presente invenção permite obter concentrados proteicos e peptídicos com baixo teor em lactose e sais, que apresentam actividades biológicas úteis para a formulação de produtos nas indústria alimentar e farmacêutica. Assim, os hidrolisados, e as suas fracções ou péptidos resultantes deste processo, podem ser utilizados em produtos alimentares, actuando como conservantes dos mesmos, ou então, após a sua ingestão, reforçando as defesas naturais do organismo. Também podem ser utilizados na elaboração de produtos farmacêuticos dirigidos a doenças, particularmente para facilitar o controlo da pressão arterial e/ou infecções bacterianas, e processos inflamatórios e ulcerogénicos. A invenção amplia as aplicações das proteínas lácteas, contribuindo assim para o aproveitamento e revalorização em particular do soro de leite.
