Disclosed is a taste enhancing agent for achieving sufficient saltiness or sweetness even in cases where the salt content or sugar content in food is reduced. Specifically disclosed is a taste enhancing agent which contains one or more substances selected from among linear aliphatic aldehydes having 3-10 carbon atoms and linear aliphatic alcohols having 4-10 carbon atoms as active ingredients. The amount of salt content or sugar content added to food can be reduced by adding the taste enhancing agent to the food.

L'invention concerne un agent exhausteur de goût permettant d'atteindre un goût salé ou sucré suffisant même dans des cas où la teneur en sel ou la teneur en sucre dans l'aliment est réduite. L'invention concerne spécifiquement un agent exhausteur de goût qui contient une ou plusieurs substances choisies parmi les aldéhydes aliphatiques linéaires comportant 3 à 10 atomes de carbone et les alcools aliphatiques linéaires comportant 4 à 10 atomes de carbone en tant qu'ingrédients actifs. La quantité de teneur en sel ou de teneur en sucre ajoutée à l'aliment peut être réduite en ajoutant l'agent exhausteur de goût à l'aliment.

本発明は、食品中の塩分や糖分を低減したときにも充分な塩味や甘味を得るための味覚増強剤を提供する。 本発明は、炭素数3~10の直鎖脂肪族アルデヒド類及び炭素数4~10の直鎖脂肪族アルコール類から選択される1種又は2種以上を有効成分とする味覚増強剤であって、食品中に添加することで塩分や糖分の添加量低減を図ることができる。
