The invention relates to a method for developing novel non-allergenic oenologic polymers, which consists of the polymerization, conducted in a plurality of steps, of natural materials that are used in oenology, particularly caseins, ovalbumins, gelatins, lysozymes, isinglasses, glutens, enzymes, and tannins. The polymers and copolymers according to the invention can be used, alone or variously combined, in the treatment, clarification, and preservation of plant-based beverages and in particular of grape musts, still or sparkling wines, fruit juices, beers, ciders, and vinegars. Said novel oenologic polymers, insoluble and functional in an aqueous medium, do not release allergenic residues in the beverages in which the same are used, and are sufficiently safe for the operators and for consumers.

L'invention concerne un procédé d'élaboration de nouveaux polymères œnologiques non allergènes, qui consiste en une polymérisation dirigée en plusieurs étapes de produits naturels utilisés en œnologie, notamment les caséines, ovalbumines, gélatines, lysozymes, ichthyocolles, glutens, enzymes et tanins. Les polymères et copolymères selon l'invention sont appliqués, seuls ou diversement associés, dans le traitement, la clarification et la conservation des boissons d'origine végétale, et notamment des moûts de raisin, des vins tranquilles et effervescents, des jus de fruits, des bières, des cidres et des vinaigres. Ces nouveaux polymères œnologiques, insolubles et fonctionnels en milieux aqueux, ne libèrent pas de résidus allergènes dans les boissons où ils sont utilisés et présentent une innocuité satisfaisante pour les opérateurs et les consommateurs.
