Abstract

The present invention relates to a process for preparing a comestible product comprising xylitol said method comprising: (a) subjecting a composition comprising xylitol in an amount ranging from about 60% to about 100% by weight to extrusion treatment inside an extrusion apparatus under conditions sufficient to form and maintain the xylitol in a slurry and (b) then shaping the extruded slurry and cooling the product to form a solid. The present invention additionally is directed to a product produced therefrom.

La présente invention concerne un procédé de préparation d'un produit comestible contenant du xylitol, ledit procédé comprenant : (a) la soumission d'une composition contenant du xylitol en une quantité comprise entre environ 60 % et environ 100 % en poids à un traitement d'extrusion à l'intérieur d'un appareil d'extrusion dans des conditions suffisantes pour former et maintenir le xylitol sous forme d'une pâte, et (b) le façonnage de la pâte extrudée et le refroidissement du produit pour former un solide. La présente invention concerne en outre un produit obtenu par ce procédé.
