Method for post-extracting low-acyl gellan gum comprises steps: deacetylating of gellan gum fermentation broth, enzyme treating, flocculating the low-acyl gellan gum with bivalent or multivalent metal cations, clarifying the gellan gum solution, dewatering the gellan gum solution, removing bivalent or multivalent cations and decoloring, and drying and crushing. As preferred, chelating agent/acid system of appropriate amount may be also added before the step of drying and crushing, so as to chelate bivalent cations which may be introduced additionally in the use of gellen gum, and keep pH in relatively stable value at the same time. Various low-acyl gellan gums prepared by above method are also provided, which have features of good appearance, high transmittance, high gel strength, and have specific performance of color value of more than 83%, transmittance of more than 85%, and gel strength of more than 400g/ cm2.

La présente invention a pour objet un procédé de post-extraction d'une gomme gellane à faible teneur en acyle comprenant les étapes consistant : à désacétyler le bouillon de fermentation de gomme gellane, à traiter de manière enzymatique, à floculer la gomme gellane à faible teneur en acyle à l'aide de cations métalliques bivalents ou multivalents, à clarifier la solution de gomme gellane, à déshydrater la solution de gomme gellane, à éliminer les cations bivalents ou multivalents et à décolorer, et à sécher et à concasser. De préférence, un système agent chélatant/acide de la quantité appropriée peut être aussi ajouté avant l'étape de séchage et de concassage, de sorte à chélater les cations bivalents qui peuvent être introduits de manière additionnelle dans l'utilisation de la gomme gellane, et à maintenir le pH à une valeur relativement stable en même temps. La présente invention concerne également différentes gommes gellane à faible teneur en acyle préparées par le procédé ci-dessus, qui ont des caractéristiques de bon aspect, de transmittance élevée, de résistance élevée au gel, et ont une performance spécifique de la valeur de couleur supérieure à 83 %, une transmittance supérieure à 85 %, et une résistance au gel supérieure à 400 g/cm2.
