(EN)Provided is a difructose-dianhydride (DFA) III synthetase having excellent thermostability and enzyme activity. The DFA III synthetase is derived from a microorganism belonging to the genus Curtobacterium that has the activity to convert inulin into DFA III and exhibits a residual activity of 90% or more at 80°C.
(FR)L'invention concerne une difructose-dianhydride (DFA) III synthétase très stable en présence de chaleur et possédant une activité enzymatique. La DFA III synthétase provient d'un micro-organisme appartenant au genre Curtobacterium qui a la capacité de convertir l'inuline en DFA III et qui présente une activité résiduelle supérieure ou égale à 90 % à 80 °C.
