(EN)Bacteria from family Enterobacteriaceae, belonging to a genus selected from among Escherichia, Enterobacter, Pantoea, Erwinia, Klebsiella, and Raoultella, or products obtained by treating said bacteria, are allowed to act on an organic raw material in a reaction solution containing carbonate ions, bicarbonate ions, or carbon dioxide gas. Said bacteria are capable of producing an organic acid modified so as to have increased phosphoenolpyruvate carboxykinase activation and decreased glucose phosphotransferase activation.
(FR)L'invention porte sur des bactéries de la famille Enterobacteriaceae, appartenant à un genre choisi parmi Escherichia, Enterobacter, Pantoea, Erwinia, Klebsiella et Raoultella, ou sur des produits obtenus par le traitement desdites bactéries. Lesdites bactéries et/ou lesdits produits sont amenés à agir sur une matière première organique dans une solution réactionnelle contenant des ions carbonates, des ions bicarbonates ou du dioxyde de carbone gazeux. Lesdites bactéries sont capables de produire un acide organique modifié de façon à avoir une plus grande activation de la phosphoénolpyruvate-carboxykinase et une moindre activation de la glucose phosphotransférase.
