Abstract:
(EN) A process for the isolation and/or purification of a desired component, particularly 3'sialyl lactose, from whey, particularly cheese whey, comprising the steps of: optionally subjecting the whey to ultrafiltration to provide a protein concentrate and a whey permeate; contacting the whey or whey permeate with at least one series of ion exchange resins, said series comprising a first weak acid cation resin, a first weak base anion resin, a second strong acid cation resin, a second weak base anion resin to demineralise the whey permeate; contacting this demineralised permeate with two final ion exchange resins comprising a strong acid cation resin and a final weak base anion resin, wherein the desired component, such as 3' sialyl lactose, is taken up on the final anion resin; and eluting the desired component from the final anion resin.
(FR) L'invention concerne un procédé d'isolation et/ou de purification d'un composant désiré, en particulier le 3'sialyllactose du lactosérum, et plus particulièrement le lactosérum de fromage, comprenant les étapes suivantes : soumission éventuelle du lactosérum à une ultrafiltration pour obtenir un concentrât de protéine et un perméat de lactosérum; mise en contact du lactosérum ou du perméat de lactosérum avec au moins une série de résines échangeuses d'ions comprenant une première résine cationique faiblement acide, une première résine anionique faiblement acide, une seconde résine cationique fortement acide et une seconde résine anionique faiblement basique, pour déminéraliser le perméat de lactosérum; mise en contact de ce perméat déminéralisé avec deux résines finales échangeuses d'ions comprenant une résine cationique faiblement acide et une résine anionique finale faiblement acide, le composant désiré, tel que le 3'sialyllactose, étant capté sur la résine anionique finale; et élution du composant désiré de la résine anionique.
