Abstract:
(EN) A process for the demineralisation and fractionation of cheese whey or raw milk comprising the steps of: a) subjecting the whey or raw milk to ultrafiltration to provide a retentate fraction and a permeate fraction; b) concentrating the permeate fraction by means of nanofiltration; c) subjecting the nanofiltration retentate to ion permeation chromatography at elevated temperatures of between 50°C and 80°C using an appropriate resin; and d) eluting the nanofiltration retentate with water in various fractions to obtain fractions which may be low in mineral content and/or high in 3 '-sialyl lactose content and/or high in other desirable components.
(FR) L'invention concerne un procédé de déminéralisation et de fractionnement de lactosérum de fromage ou de lait cru comprenant les étapes qui consistent à : a) soumettre le lactosérum ou de lait cru à une ultrafiltration afin d'obtenir une fraction de rétentat et une fraction de perméat; b) concentrer la fraction de perméat par nanofiltration; c) soumettre le rétentat de nanofiltration à une chromatographie ionique par perméation à des températures élevées comprises entre 500C et 800C au moyen d'une résine appropriée; et d) éluer le rétentat de nanofiltration avec de l'eau dans des fractions variées afin d'obtenir des fractions qui peuvent présenter une faible teneur en minéraux et/ou une teneur élevée en 3 '-sialyllactose dans d'autres composants souhaités.
