Abstract:
(EN) Disclosed is an oil-in-water-type emulsion product having a milk flavor which is improved at lower cost and in a convenient manner. Specifically disclosed is a foaming oil-in-water-type emulsion which contains a milk-derived protein in an amount of 0.5 to 3% by weight, is so governed that the concentration of calcium ions in an aqueous phase produced by centrifuging the emulsion can become 30 to 100 mg/100 g, and has an oil-and-fat content of 15 to 50% by weight.  It becomes possible to produce a product having an improved milk flavor at lower cost and in a convenient manner.
(FR) L'invention porte sur un produit d'émulsion du type huile dans l'eau ayant un goût de lait, qui est amélioré à moindre coût et d'une manière appropriée. L'invention porte de façon spécifique sur une émulsion du type huile dans l'eau moussante qui contient une protéine dérivée du lait sous une quantité de 0,5 à 3 % en poids, qui est régulée de telle sorte que la concentration d'ions calcium dans une phase aqueuse produite par centrifugation de l'émulsion peut devenir de 30 à 100 mg/100 g, et qui a une teneur en huile et en graisse de 15 à 50 % en poids. Il devient possible de produire un produit ayant un goût de lait amélioré à moindre coût et d'une manière appropriée.
(JA) 水中油型乳化物において、少ないコストでかつ簡易な方法で乳風味を向上させた製品を提供すること。 乳に由来する蛋白を0.5~3重量%含有し、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gに調整された、油脂含量15~50重量%の起泡性水中油型乳化物とする。これにより、少ないコストでかつ簡易な方法で乳風味を向上させた製品を得ることができる。
