Abstract:
(EN) Provided is a method for producing an unfermented beer-flavored malt beverage by adjusting the linalool concentration and acetaldehyde concentration of a malt beverage whereof the flavor is to be improved, and thereby imparting a fermented flavor to the malt beverage or enhancing the fermented flavor of the malt beverage. Also provided are a malt beverage having improved flavor and an agent for improving flavor. A well-balanced fermented flavor is imparted or enhanced in order to improve the flavor of an unfermented beer-flavored malt beverage.
(FR) Le procédé de fabrication de la boisson maltée à saveur de bière, non fermentée, qui fait l'objet de l'invention se caractérise en ce qu'il vise une amélioration de la saveur en conférant une saveur fermentée à une boisson, ou en renforçant la saveur fermentée de celle-ci, par ajustement des concentrations de linalol et d'acétaldéhyde dans la boisson maltée. L'invention concerne également une boisson maltée de saveur améliorée ainsi qu'un agent de sapidité. Grâce à cette invention, on peut améliorer la saveur d'une boisson maltée à saveur de bière, non fermentée, en lui conférant une saveur fermentée bien équilibrée ou en renforçant cette saveur.
(JA)  本発明による未発酵のビール風味麦芽飲料の製造方法は、風味改善しようとする麦芽飲料中のリナロール濃度とアセトアルデヒド濃度とを調整することによって、飲料に発酵風味を付与または増強することを特徴とする。本発明はまた、風味改善された麦芽飲料および風味改善剤も関する。本発明によれば、未発酵のビール風味麦芽飲料に、バランスの良い発酵風味を付与・増強して、飲料の風味を改善することができる。
