(EN)Disclosed are bitter alkaloid-containing consumables comprising bitter blockers for a reduced alkaloid-derived bitterness and methods of forming said consumables. The preferred bitter blockers are trilobatin and hesperetin dihydrochalcone 4 -beta-D-glucoside (HDG). Examples of bitter alkaloids are coffeine, theophylline and theobromine.
(FR)La présente invention concerne des produits de consommation contenant des alcaloïdes amers, mais aussi des substances anti-amertume destinées à minimiser l'amertume due aux alcaloïdes, ainsi que des procédés de fabrication desdits produits de consommation. Les substances anti-amertume préférées sont la trilobatine et l'hespérétine dihydrochalcone 4-bêta-D-glucoside (HDG). Comme exemples d'alcaloïdes amers, on peut citer la caféine, la théophylline et la théobromine.
