(EN)The invention relates to a method for producing milk foam, including a step of producing foam during which air is added into the milk such that milk foam is produced. According to the invention, the method includes a preliminary preheating step during which the milk is heated to a foam production start temperature of between 25 and 60°C, and preferably between 30 and 40°C.
(FR)L'invention concerne un procédé de moussage de lait comprenant une étape de moussage lors de laquelle de l'air est introduit dans du lait de façon à réaliser de la mousse de lait. Selon l'invention, le procédé comprend une étape préalable de préchauffage lors de laquelle le lait est chauffé jusqu'à une température de début de moussage comprise entre 25 et 60°C, et de préférence, entre 30 et 40°C.
