Abstract

The invention relates to methods for obtaining stable avocado pulp powders having a long life shelf life at ambient temperature, without requiring the use of natural or synthetic preservatives, thereby enabling the natural components of the pulp and the organoleptic properties of the fruit to be preserved. The powders can be used to obtain compacted products, such as tablets for food or cosmetic use. The invention also relates to dehydration methods for obtaining said powders, in which the avocado pulp is dehydrated using microwaves and hot air flows simultaneously, enabling the production of powders with low water activities and the elimination of unwanted enzyme activities specific to the fruit, without the addition of preservatives.

La invención describe Ia obtención de polvos estables de pulpa de aguacate con larga vida de anaquel a temperatura ambiente sin Ia necesidad de utilizar conservadores naturales o sintéticos, Io que permite preservar los componentes naturales de Ia pulpa y las propiedades organolépticas del fruto. Los polvos de Ia invención permiten Ia obtención de productos compactados, tales como pastillas con aplicaciones alimenticias o cosméticas. Se describen también métodos de deshidratación para Ia obtención del polvo de Ia invención que incluye Ia deshidratación de Ia pulpa de aguacate mediante microondas y flujos de aire caliente de forma simultánea, Io que permite Ia obtención de polvos con bajas actividades acuosas y Ia eliminación de actividades enzimáticas indeseables propias del fruto sin Ia adición de conservadores.

L'invention concerne l'obtention de poudres stables de pulpe d'avocat à longue durée de conservation à température ambiante, sans qu'il soit nécessaire de recourir à des conservateurs naturels ou synthétiques, ce qui permet de préserver les constituants naturels de la pulpe et les propriétés organoleptiques du fruit. Les poudres de l'invention permettent l'obtention de produits compactés, tels que des pastilles avec des applications alimentaires ou cosmétiques. L'invention concerne également des procédés de déshydratation permettant l'obtention de la poudre de l'invention qui comprennent la déshydratation de la pulpe d'avocat par utilisation simultanée de micro-ondes et de flux d'air chaud, ce qui permet l'obtention de poudres à faibles activités aqueuses et l'élimination d'activités enzymatiques indésirables caractéristiques de ce fruit sans addition de conservateurs.
