Abstract:
(EN) The invention relates to a method of degrading plant- based β-glucan into a controlled molecular size by hydro- lyzing β-glucan in a closed space under pressure by means of an acid at an elevated temperature. The invention also relates to a degraded β-glucan product. The β-glucan product obtained is useful in foodstuffs applications, such as beverages.
(FR) Cette invention concerne un procédé de dégradation du bêta-glucane d'origine végétale pour obtenir une taille moléculaire contrôlée en hydrolysant le bêta-glucane dans un espace clos sous pression par l'intermédiaire d'un acide à une température élevée. L'invention concerne également un produit de dégradation du bêta-glucane. Le produit de bêta-glucane obtenu est utile dans les applications alimentaires, par exemple dans les boissons.
