(EN)Esterification of a carbohydrate using an acylating agent selected from organic and inorganic acids and esters thereof can effectively be performed using a process comprising: (a) combining the carbohydrate with the acylating agent, (b) adjusting the moisture content of the combination below 40 wt.%, and (c) subjecting the combination to superheated steam having a degree of saturation between 10 and 95% and having a temperature of at least 100°C. The carbohydrate is especially starch and the acylating agent is in particular an acid, such as an organic acid, amino acid, or diacid.
(FR)Une estérification d'un glucide à l'aide d'un agent acylant choisi parmi les acides organiques et inorganiques et leurs esters peut efficacement être réalisée à l'aide d'un procédé comprenant les opérations consistant à : (a) combiner le glucide avec l'agent acylant, (b) ajuster le taux d'humidité de la combinaison en dessous de 40 % en poids et (c) soumettre la combinaison à de la vapeur d'eau surchauffée ayant un degré de saturation entre 10 et 95 % et ayant une température d'au moins 100°C.
