(EN)A novel &agr;-galactosidase with which raffinose can be selectively synthesized. The &agr;-galactosidase has the property of attaining a selectivity to raffinose of 65% or higher when the dehydrating condensation of sucrose and galactose as raw materials yields oligosaccharides having a raffinose content of 0.5% or higher.
(FR)L'invention porte sur une nouvelle α-galactosidase avec laquelle le raffinose peut être synthétisé de façon sélective. L'α-galactosidase présente la propriété de permettre de parvenir à une sélectivité vis-à-vis du raffinose de 65 % ou plus lorsque la condensation par déshydratation de saccharose et de galactose comme matières premières fournit des oligosaccharides ayant une teneur en raffinose de 0,5 % ou plus.
(JA) 本発明の目的は、選択的にラフィノースを合成することが可能な新規α-ガラクトシダーゼを提供することである。本発明によれば、スクロースとガラクトースを原料とした脱水縮合反応において、生成オリゴ糖中のラフィノース含有率が0.5%以上のとき、ラフィノース合成選択率が65%以上という性質を有するα-ガラクトシダーゼが提供される。
