(EN)Disclosed is a glyceroglycolipid lipase which is highly safe, can hydrolyze a neutral fat, a glycerophospholipid or a glyceroglycolipid at about pH 6, is thermally stable to some extent, can hydrolyze lecithin, cannot hydrolyze lysolecithin, can rise a bread when used singly in the production of the bread, and has no unpleasant odor. Specifically disclosed is a glyceroglycolipid lipase derived from a filamentous bacterium Aspergillus japonicus.
(FR)La présente invention concerne une lipase glycérolipidique très sûre, capable d'hydrolyser une graisse neutre, un glycérophospholipide ou un glycéroglycolipide à un pH de 6 environ, thermiquement stable jusqu'à une certaine mesure, capable d'hydrolyser la lécithine, incapable d'hydrolyser la lysolécithine, capable de lever le pain lorsqu'elle est utilisée seule lors de la production de pain et ne dégage aucune odeur désagréable. L'invention porte plus particulièrement sur une lipase glycéroglycolipidique dérivée d'une bactérie filamenteuse l'Aspergillus japonicus.
