Abstract:
(EN) Methods of enhancing the flavor of fruits or vegetables within its own product packaging to extend the shelf-life and allow for mass production and mass distribution of the flavor enhanced fruits or vegetables, and the packaged flavor enhanced fruits or vegetables products produced by such methods. The methods comprise providing product packaging capable of retaining a positive pressure of CO2, receiving fruits or vegetables into the product packaging, introducing CO2 into the product packaging, and sealing the product packaging containing the fruits or vegetables and CO2, and wherein the product packaging retains a positive pressure of CO2, and the fruits or vegetables absorb the CO2 thereby enhancing the flavor of the fruits or vegetables within the product packaging. In one embodiment, the methods comprise freezing the carbonated packaged fruits or vegetables thereby trapping the flavor enhancing CO2 within the fruits or vegetables to produce a frozen carbonated fruits or vegetables product, hi one embodiment, the fruits or vegetables received into the product packaging may be pureed to a consistency suitable for consumption as a smoothy or similar beverage product.
(FR) L'invention concerne des procédés visant à améliorer le goût de fruits ou de légumes dans leur propre emballage afin d'augmenter leur durée de conservation et de permettre la production de masse et la distribution de masse desdits fruits et légumes au goût amélioré, ainsi que les fruits et légumes emballés au goût amélioré obtenus selon lesdits procédés. Ces procédés consistent à utiliser un emballage pouvant maintenir une pression positive de CO2, à placer des fruits ou des légumes dans ledit emballage, à introduire du CO2 dans l'emballage, et à fermer hermétiquement l'emballage contenant les fruits ou les légumes et le CO2. L'emballage maintient une pression positive de CO2, et les fruits ou les légumes absorbent le CO2, améliorant ainsi le goût des fruits ou des légumes contenus dans l'emballage. Dans un mode de réalisation, lesdits procédés consistent à congeler les fruits ou les légumes emballés carbonatés, piégeant ainsi le CO2 exhausteur de goût dans les fruits ou les légumes afin d'obtenir des fruits ou des légumes carbonatés congelés. Dans un mode de réalisation, les fruits ou les légumes contenus dans l'emballage peuvent être transformés en purée afin d'obtenir une consistance adaptée pour être consommée comme produit à boire onctueux ou autre produit semblable.
