Abstract:
(EN) The present invention relates to an extended refrigerated shelf life mashed potato product, the processes, and the system used to make the product. In particular, the present invention relates to a process of substantially reducing Bacillus cereus spores and non-proteolytic Clostridium botulinum spores in mashed potatoes.
(FR) L'invention porte sur l'un produit de purée de pommes de terre congelée à durée de conservation étendue, sur son procédé d'obtention et sur son système de fabrication, et en particulier sur réduisant sensiblement les spores de Bacillus cereus et les spores de Clostridium botulinum non protéolytique dans la purée de pommes de terre.
