(EN) A method is described for treating fish flesh with basic and possibly acidic solutions in the form of baths, spraying or injection in order to improve technical and sensory properties in the fish flesh, fish flesh treated by the method and a plant for treating the fish flesh.
(FR) La présente invention concerne une méthode de traitement de la chair de poisson avec des solutions basiques et éventuellement acides sous forme de bains, de pulvérisation ou d'injection de façon à améliorer les propriétés techniques et sensorielles de la chair de poisson, ainsi que la chair de poisson traitée par la méthode et une usine de traitement de cette chair de poisson.
