Abstract:
(EN) The invention relates to a method of producing whole corn meal with a high concentration of bioavailable niacin and hemicellulose. The inventive method comprises the following main steps consisting in: a) washing the grain with water, b) nixtamalizing the washed grin, c) sterilising same in an autoclave, and d) sieving the product obtained through a 0.25-mm mesh. The invention eliminates contaminant effluents.
(ES) Proceso de producción de harina integral de maíz con un alto contenido de niacina biodisponible y hemicelulosa, cuyas etapas principales son las siguientes: a) lavado del grano con agua, b) nixtamalización del grano lavado, c) esterilización en autoclave y d) cribado del producto obtenido a través de una malla de 0,25mm. Dicho proceso elimina los efluentes contaminantes.
(FR) Ce procédé de production de farine complète de maïs à forte teneur en niacine biodisponible et hémicellulose ne nécessite pas la production d'effluents polluants. Le grain de maïs est nixtamalisé en présence d'hydroxyde de calcium et d'eau selon un rapport de 0,5:1 afin d'obtenir un produit exempt d'effluents polluants à forte teneur en niacine biodisponible et hémicellulose et dont la durée de conservation est d'une année.
