A method and apparatus for pan roasting a mass of green coffee beans at rest by heat conduction from the pan bottom to the beans mass. A glass cover and smoke filter closes the roasting chamber. A radial blower operates at slow speed to draw ambient air and vacate smoke from the chamber to permit visual monitoring of roasting beans. Periodically, the fan can operate a high speed for a short time to mix or swirl the bean mass without substantial cooling them. The blower can sequence through high and low speed cycles until roasting completes and heating ceases. A high speed cool down phase removes remaining chaff, smoke, and quick cools the beans to preserve freshness. Electric power drives the blower and resistant heating element. The system enables the operator to use appearance, sound, smell, and time to determine roasting completeness.

L'invention concerne un procédé et un dispositif de poêlage de grains de café vert par conduction thermique par la base de la poêle. Un couvercle en verre et un filtre à fumée ferment la chambre de torréfaction. Une souffleuse radiale fonctionne à faible vitesse afin d'aspirer l'air ambiant et extraire la fumée de la chambre de manière à permettre un contrôle visuel des grains de torréfaction. La souffleuse peut fonctionner périodiquement à vitesse élevée, sur une courte période, de manière à mélanger les grains ou créer un tourbillon sans refroidir les grains de façon notoire. La souffleuse peut alterner les cycles de vitesses faible et élevée jusqu'à la fin de la torréfaction et que le chauffage s'achève. Une phase de refroidissement grande vitesse élimine les paillettes, la fumée, et refroidit les grains afin d'en préserver la fraîcheur. Le courant électrique entraîne la souffleuse et l'élément de chauffage résistant. Ledit système permet à l'utilisateur de déterminer le terme de la torréfaction sur la base de l'apparence, du son, de l'odeur et du temps.
