(EN)This invention relates to a process for the preparation of bread and other bakery products leavened with Saccharomyces cerevisiae, the process comprising the addition of phenyl-lactic acid or a microorganism fermentation product that contains phenyl-lactic acid to the dough. The process allows to reduce germination of Bacillus spores which cause ropy bread.
(FR)La présente invention concerne un procédé de préparation de pain et autres produits de boulangerie levés par Saccharomyces cerevisiae, le procédé comprenant l'ajout à la pâte d'acide phényllactique ou d'un produit de fermentation de micro-organismes contenant de l'acide phényllactique. Le procédé permet de réduire la germination des spores de Bacillus qui sont responsables du filant du pain.
